Happy Thanksgiving week from our family to yours. We are deep into our Holiday Sale of our apples and pears at our self serve farm stand. All our apples are 75cents a pound and all pears are 50 cents a pound. Stop by this weekend to get ready with the holiday season with fresh local fruit for pies and more. INGREDIENTS
GRANNY SMITH APPLE FILLING
8 Mt View Orchards Granny Smith apples, peeled, cored and sliced
½ cup (50 g) white sugar
½ cup (60 g) packed brown sugar
2 tablespoons flour
1 tablespoon lemon juice
½ teaspoon salt
1 teaspoon of cinnamon, nutmeg and cardamom
1 tablespoon butter
ASSEMBLY
1 large egg
1 tablespoon Water
2 tablespoon coarse sugar
INSTRUCTIONS
Prepare a Pie Dough or pre-made dough according to the recipe and roll out for the filling.
GRANNY SMITH APPLE FILLING
Preheat oven to 425°F (220°C).
Place the granny smith apple slices into a large bowl. Add the white sugar, brown sugar, flour, lemon juice, spices, and salt. Stir to coat the apples completely.
Place the apple mixture into the pie shell. Cut the butter into small squares and scatter over the top of the apple filling.
Place the top crust onto the pie and seal the edges. Decorate as desired, and cut slits into the top to vent steam if making a full double crust.
Whisk the egg with the water to make an egg wash. Use a pastry brush to coat the top crust with the wash and sprinkle with coarse sugar.
Place a baking sheet on the bottom rack of the oven to catch any juices that may bubble over during baking. Happy Thanksgiving
